Senior living organizations are navigating unprecedented challenges and opportunities as they adapt to workforce shortages, increasing resident acuity, evolving regulations, and changing consumer expectations. At the same time, residents and families increasingly expect personalized care experiences, hospitality-driven dining, enhanced safety practices, and modern technology integration throughout the continuum of care. This forward-looking session explores the emerging trends reshaping the future of nutrition, dining, and clinical nutrition services within long-term care, skilled nursing, rehabilitation, assisted living, and continuing care retirement communities (CCRCs). Presenters will examine innovative operational and clinical strategies that support resident-centered care while improving efficiency, workforce sustainability, and quality outcomes.

Topics will include telehealth and hybrid dietitian care models, AI-supported nutrition workflows, digital tray costing and meal ordering systems, hydration innovation programs, malnutrition technology platforms, workforce retention strategies, and advancements in dysphagia management through IDDSI implementation. The session will also explore funding and grant opportunities available within senior living environments to support modernization and innovation efforts. Attendees will leave with practical ideas, emerging best practices, and operational insights that can help organizations remain adaptive, compliant, efficient, and future-focused while maintaining dignity, safety, and hospitality for aging populations.

Jenna L. Boytek, MS, RD, is Vice President of Clinical Nutrition at HHS and a healthcare executive with more than 20 years of leadership experience. She drives innovation in clinical nutrition through regulatory expertise, data-driven strategy, and technology-enabled operations that improve outcomes, compliance, and performance. Appointed by the Governor of West Virginia to the Board of Licensed Dietitians, Jenna is a recognized leader in policy, program development, and professional advocacy. She is passionate about mentoring future dietitians and advancing healthcare through innovation, service excellence, and evidence-based practice.
Keiy Murofushi, MS, RDN, LD, is Vice President of Clinical Growth and Strategy at HHS, leading innovative clinical nutrition initiatives that improve patient outcomes, quality, and financial performance. A nationally recognized expert in AI, nutrition research, and healthcare strategy, he serves in leadership roles with the Academy of Nutrition and Dietetics and the American Society for Nutrition, helping shape the future of AI in nutrition care. With executive experience at Johns Hopkins and Cedars-Sinai, Keiy combines expertise in operations, policy, research, and technology to develop scalable, evidence-based solutions for healthcare systems.
